My Go-To Breakfast: Spinach + Tomato Egg Toast

Out of the recipes I have written about, most of them have been about breakfast (Exhibit A). Since I'm most definitely not a morning person, I always look forward to taking my time making breakfast with the Today Show in the background. Today, I'm showing one of favorite recipes - which is not really a recipe since it's incredibly easy (while still being filling and pretty good for you)

- 1 slice of whole grain bread
- 1 egg
- 1 T olive oil
- spinach
- tomato 
- salt + pepper
- favorite seasonings 
- Heat olive oil in a pan on medium. Then, using a knife or biscuit cutter, cut out the center of the bread.
-Toast one side of the bread in the pan, and crack an egg into the hole. Cook for a couple of minutes. 
-Flip the toast over and finish cooking the egg (unless you like sunny side up!). 
-Remove from pan and add a handful of spinach and sliced tomato. Sautee until spinach has wilted.
-Top the toast with the vegetables, adding salt and pepper and some more seasoning. I love lemon and rosemary!
This takes a minimum of five minutes, and I love the combination of flavors. Cooking the egg in the middle of the toast is optional, but I think it's so much more fun that way!

The Infinite Moment of Us

I've probably mentioned this before, but one thing I missed while being at school was READING. I definitely do not miss textbooks, but books that surprise me or make me smile. Even before I moved out of my dorm room, I put multiple books on hold just so I could go to the library and pick them all up right away. I have a running list of books I want to read on my phone, and The Infinite Moment of Us by Lauren Myracle was on it after glancing at it at the store. Of course, I will not be giving away any spoilers, but just a little review (of hopefully many this summer!). 

Yes, even though I'll be a sophomore in college next year, I still like to lounge around with the typical YA-ish novel in the summertime. I saw this had 3/5 stars on goodreads.com and I decided to try it out. The main jist of the plot is that Wren, a girl who is about to graduate high school has always listened to her parents and barely did anything wrong in her life. Then, when she meets Charlie, another boy at her high school at the hospital, they become close and start a relationship. 

And honestly, that's literally the entire storyline of the book. 

It was your cookie cutter innocent girl meets bad boy, and I just wasn't able to connect with any of the characters. It didn't really pull at me like a good book does. I wish I had more good things to say, but I do know the author is known for other books that are better, and I might give them a try. I'd recommend this for a super lazy beach read, but otherwise, I wasn't too impressed. Not the best start to my summer reading list, but it was nice to get back into reading!

It's been forever since I've done an outfit post, but my friend Ian graciously helped me with these photos - he's so talented! This day, I was going to a graduation party and dressed up more than usual since it was for one of my best friends. It was still comfy but put together which are my favorite outfits. To top it off, I wore these black booties from H&M which I wear ALL the time, and this statement necklace from See Song Designs. It goes with pretty much everything, and adds some sparkle.

Refreshing Citrus Quinoa Salad

I'm really into salad at the moment (more than usual), and I love finding new variations with different flavors. I was inspired the fact that we had way too many oranges going bad soon, so I combined it with some delicious quinoa. I used to be skeptical of quinoa, but after making it a couple of times, it's a breeze to make, and I love how fluffy it gets. I definitely think this would perfect at a barbecue, picnic, or my favorite - after I get home from work. I can eat SO much of this salad...you don't even want to know.

- 1 T freshly squeezed orange juice
- 1 t honey
- 1/2 T balsamic vinegar
- 1 T olive oil
-salt + pepper (SO important!)
-cooked quinoa
-orange wedges + a couple tablespoons of orange juice
-dried cranberries
1. soak dried cranberries in orange juice and prepare quinoa (follow directions on back of package).
2. whisk together all ingredients for dressing. taste to make sure flavors are how you like it [salty, sweet, etc.] 
3. mix together vegetables, quinoa, and cranberries (w/out OJ), and toss with dressing.
4. let salad chill and marinate in fridge for at least 20 minutes before serving.

6 Less Popular Shows On Netflix

Summer will always have that feeling of being able to be lazy and do nothing. And even though I'm taking a summer class and working, I will always find time to do nothing. Especially when the weather is beautiful, laying outside and watching Netflix on my favorite blanket will never get old. I've heard of many shows to watch on Netflix, but here are a couple that are a less talked about (in my opinion, haha). Also, I sort of have a weird taste in TV shows since I'll watch pretty much anything - I just love a good storyline. 
3rd Rock From the Sun 
Starring my favorite Joseph Gordon-Levitt when he was much younger, this is a great show to get you smiling. About aliens who come to Earth as humans to inspect people's behavior, their antics always make me laugh. Just look at how cute was JGL back then (!!!). 
Skins UK
Definitely not for anyone under 16, this show is like Degrassi but 10x more intense and inappropriate. Touching on topics like eating disorders, depression, relationships, etc., you'll fall in love with the characters and how vulnerable they are as teens. 
This is exactly the type of show the CW needed! With such a strong female lead and male lead Shane West, from A Walk to Remember, I absolutely love the action in every episode. Definitely one of my all time favorites.
Preacher's Daughters 
Even though only the first season is on Netflix right now, it's my favorite season because of how genuine the three daughters are. Their experiences are funny, but relatable. Definitely entertaining.
If you know me, I LOVE superheroes. Especially the brooding, dark ones. Charlie Cox plays Daredevil, a blind man with heightened senses as he tries to save Hell's Kitchen in NYC. The writing, plot, acting, and actions sequences are all amazing, and I would highly recommend it to anyone!
One Tree Hill 
I will say this show is pretty popular already, but I just have to mention One Tree Hill because i can't think of an episode I didn't like. Circa early 2000's, the music is just perfect, and you'll fall in love with all of the characters and their love triangles.

Homemade Blueberry Lemon Fruit Snacks

I always love trying out new recipes, and that mainly includes ones with less than 5 ingredients (because I'm lazy). And now that I'm home for the summer, I've been making something new almost everyday! These little gummy bites are so much better for you than the artificial kind, and are fun to make. You'll need a silicone mold (mine's from Ikea, here's one from Target), or just pour the liquid into a baking sheet and cut out shapes after it's set in the freezer. 
-1/2 cup fresh fruit
-1/4 cup water
-juice from 1/2 a lemon
-1 tablespoon honey
-2 packets gelatin (agar agar is a good alternative) 
-optional: added sugar/sweetener 
1. Puree fruit and put into saucepan on low/medium.
2. Whisk in water, lemon, and honey. 
3. Once simmering, pour in gelatin while whisking (and add in added sweetener if desired).
4. When dissolved, pour into molds and freeze for 30-35 minutes.

Shoutout to WhatsUpMoms for where this recipe is adapted from! I just LOVE every single video they make...even though it'll be a while before I become a mom. What's also great is that you could be creative and combine your favorite fruits and flavors - have fun enjoying these on the beach or as a light snack on a hot day.

The End Of Freshman Year

Like any other year, everything just flies by - but college seemed to move even faster than high school. Maybe that meant I had more fun? I got back late Thursday night after a stressful time moving out (per usual), and I already start my summer classes TOMORROW. Even though I'll be spending a couple of hours a day learning math, I'm still determined to have fun this summer! 
Here's some of my favorite moment from freshman year - and I already miss Michigan State. Thanks to everyone and God for making this year filled with happiness, learning, lessons, and blessings. 

I promiseeee I did some learning this year, and I'm sorry if I missed anyone in the pictures! I still love ya of course :)

Glamglow Supermud Clearing Treatment

When I went to Chicago about a month ago, we stopped in Sephora. My oh my it was PACKED with people trying all different kinds of makeup, and my friend Liv got a sample of Glamglow Supermud for me! It's a really good size, and will last me at least 8 times since I don't use it on my entire face  I'd say it's a tablespoon of product, and a little goes a long way.
Right away I noticed it had thinner consistency, but without being not too runny - perfect for layering. I mainly apply it on the center of my face and on my t-zone. It dries pretty fast, and it has a cooling sensation like it's sucking out gross things from my face. After 15 minutes, I just rinse it off, and my skin feels SO much smoother better every time, and even black heads just fall right off (!!!)
It is pretty pricey, being $70, but they do sell a smaller size for $20. I have to say I was very skeptical because of how expensive it is, but I think it should only be $50 max. I have non sensitive oily skin, just for reference.  I would definitely get a sample, just to see if it works with your skin. This is a product I think everyone should try out!

Campus Voxbox Review!

I've been active on Influenster for the past couple of months (a review of the company itself will be another post), and I was given this box to try out a variety of products. I took a survey, and I'm assuming the Campus Voxbox is meant for college students like myself. I received four full size items and one travel size. It came in a beautiful, bright blue box where nothing was damaged, and it arrived relatively quickly. I just had to wait a couple of weeks until my dad brought it to school for me when visiting!

St. Ives Apricot Facial Scrub: $5 I had already used this before I received it in my VoxBox, and the biggest thing I have to say is that I recommend this for people who do NOT have sensitive skin because it is harsh. It smells sooooo good though, and I use it once it week. It's good for how cheap it is, but there are definitely better scrubs out there.I have heard of people having bad experiences with it, and it's a hit or miss. 

Jergans Instant Sun Tanning Mousse: $12 I've personally never felt the need to tan, but for special occasions this would be a good product. When I do try it out, I'll let you all know how it goes! 

Soft Lips Cube in Fresh Mint: $3 Easily my favorite product in the box! I've never thought to buy this before, but I'll definitely be repurchasing when I run out. I've always used the soft lips in the stick form, but this is so much better and lasts longer. I think it's better than EOS.

L'oreal Smooth Intense Straightening Sample: I loved how conditioning it was, and it really made my hair softer! I've been using L'oreal conditioner for years, and it's definitely effective.

Sour Punch Punchies: $1 My favorite candy is definitely chocolate, so I was pretty hesitant of these. I only liked the blue and red flavors, but these were pretty good - almost as good as sour punch kids.
Sour Punch Straws:$1-$2 I've never been a huge fan of these, but my roommate loved them.
